Pizza in Greece
Most Greeks use more olive Oil than Italians on their pizza, and they also use a different type of Tomato for the base. Greek pizzas are usually cooked in an electric not wood fired oven, and cooked at lower temperatures.

Pizza Dough Method
If you don’t have much time, grab a premade pizza base at your local grocery store, or create your own homemade pizza dough following the simple steps below.
- Whisk yeast and lukewarm water in glass or plastic container. Let stand for approximately 5 minutes.
- Add flour and salt in a large bowl. Create a well in the centre of the flour. Pour in the liquid yeast mixture and the oil.
- Using your hands or a mixer, mix the dough until smooth. Pour dough on a lightly floured work surface and then knead by hand for five minutes.
- Place dough into lightly oiled bowl and cover with plastic wrap. Sit in a warm place for roughly 30 minutes to an hour, to rise until it doubles in size.
- Fold the dough out onto a lightly floured surface. Knead gently by hand for around five minutes or until smooth.
- Spread some flour on kitchen bench before rolling, in order to prevent sticking.
- Divide the dough roughly into equal amounts. Roll out pizza bases for the desired size.
TIP: We have other dough recipes if you would like to try your hand at sourdough, poolish or more.

Tomato Pizza Sauce Method
Want to take your homemade pizza to the next level? Try making your own tomato sauce using the simple steps provided.
- Add ingredients in a large bowl, and stir or blend well.
- Ensure all ingredients are mixed together well.
- Keep mixture sitting for five minutes.
- Your sauce is now ready. Enjoy!
- Keep sauce in fridge or freeze for future use.
If you prefer, use light yoghurt instead.

Preparing Fish Pizza
Preheat your kitchen oven to approximately 500 degrees.
Roll out the dough to either slightly smaller than your pizza stone (if you have one) or on a metal tray for the kitchen oven.
Alternatively, if you have a pizza oven, roll out to be smaller than your pizza peel.
First, spread the sauce around. This pizza calls for Tomato Sauce. Spread the Tomato Sauce evenly using the back of a large spoon or the blunt side of a knife.
You should start by adding the largest ingredients, then work your way down. The last is any cheese topping, such as Mozzarella, which you should evenly cover the other toppings with, and then finally any herbs.
The toppings to include on this pizza are;
- Pollock Fillets
- Onion
- Lime Juice
- Parsley
- Garlic
This pizza is perfect as is, or you could enjoy it with a fresh salad?
Oven time
Put the Fish pizza on the middle shelf of the oven and set a timer for 10 minutes.
After approximately 10 minutes, open oven door and check on pizza.
The pizza should be done within roughly 15 minutes. Always cook to personal tastes.

About Pollock Fillets
Pollock fillets are a widely popular fish dish that is both healthy and delicious. The mild flavor of pollock makes it an ideal ingredient for any meal. It is also fairly easy to prepare, making it a great option for busy people who don’t have time to spend hours in the kitchen.
Pollock fillets can be prepared in numerous ways – they can be fried, baked, grilled or even added to salads and wraps. Additionally, pollock fillets also contain low levels of mercury so they are safe to eat regularly without worrying about contamination.

Pizza Tools
When making Fish Pizza, I always recommend that you use whatever kitchen items you have. My basic pizza tools are…
Mesh Sieve
You will find having a seive such a useful element for pizza making as well as all your baking. It’s great to filter all flours through a fine mesh sieve, to make sure they’re ready for use.
Bench Scrapers
Good quality metal or plastic bench scrapers make it so much esier to both cut your dough, and scrape your bench. I prefer plastic to avoid scratching my bench.
Measuring Cups
Pizza making is all about precision, so having a full set of both wet and dry measuring cups on hand is critical. It is so important when making pizza dough to accurately measure all your ingredients.

Lime Juice
Lime Juice is ideal for seafood, pizza, curries, marinating and drinks. It can be easily made at home, or purchased as a bottle.
Lime Juice is very similar to Lemon Juice, nutritionally, and they also share many of the same potential health benefits. Both Lime and Lemon Juices are acidic and sour, however lemons tend to be sweeter, while limes have a more bitter flavor.
