Homemade pizza dough

Pizza Dough Method

If you don’t have much time, grab a premade pizza base at your local grocery store, or hand make your own pizza dough following the simple steps below.

  1. Whisk yeast and lukewarm water in a jug. Stand for around five minutes.
  2. Add the salt and flour in a large bowl. Create a hollow centre in the flour. Slowly pour the liquid yeast mixture and oil.
  3. Using your hands or spatula, gently combine the flour mixture until smooth. Then turn out dough onto lightly floured surface and hand knead for roughly five minutes.
  4. Place the dough mixture in to an oiled bowl, and cover with plastic wrap. Leave in a warm place until the dough has at least risen to double in size.
  5. Turn dough out onto a lightly floured surface. Hand knead gently for five minutes until reasonably smooth.
  6. Sprinkle some flour on work surface before rolling out dough to prevent any sticking.
  7. Divide dough mix into equal amounts, now roll out the bases to the desired size.

Preparing Nicoletto Pizza

Preheat your oven to roughly 500 degrees.

Roll out the dough to either slightly smaller than your pizza stone or tray.

Alternatively, if you have a pizza peel, roll out to be smaller than that.

You start by spreading the sauce around. This pizza calls for Olive Oil. Spread the Olive Oil evenly using the back of a large spoon or ladle.

Then start adding the largest ingredients, then work your way down. The last is any cheese topping, such as Mozzarella, which you should evenly cover the other toppings with, and then finally any herbs.

Toppings to put on this pizza are;

  • Mozzarella
  • Gorgonzola
  • Onion

This pizza is fantastic by itself, yet why not with another style of pizza?

Cooking

Put the Nicoletto pizza on the middle shelf in oven, and wait ten minutes.

After 10 minutes, open the door and check the pizza.

This pizza should take approximately 15 minutes, however allow it to cook to personal taste.

About Gorgonzola

Often referred to as blue cheese, Gorgonzola is made from cow’s milk, boasting milder flavours than those of other blue cheeses. What sets it apart from other blue cheeses is its deep roots in Italian artisanship, still influencing production today.
Gorgonzola shares many of the traits seen in similar cheeses from other culinary cultures, with the level of intensity and sharpness often being the strongest difference.

Pizza Tools

When making Nicoletto Pizza, I always recommend that you use whatever kitchen items you have. My basic pizza tools are…

Mesh Sieve

You will find having a seive such a useful element for pizza making as well as all your baking. It’s great to filter all flours through a fine mesh sieve, to make sure they’re ready for use.

Bench Scrapers

Good quality metal or plastic bench scrapers make it so much esier to both cut your dough, and scrape your bench. I prefer plastic to avoid scratching my bench.

Measuring Cups

Pizza making is all about precision, so having a full set of both wet and dry measuring cups on hand is critical. It is so important when making pizza dough to accurately measure all your ingredients.

Onion

Ancient Egyptians saw onions as a symbol of eternal life because of the circular layers. Farmed and eaten for at least 5,000 years, Onions have been used as medicine, food and even helped in Egyptian mummification.

The three most common onion colors are white, red and yellow. Onions are easy to grow, store and are cheap and full of flavour, making them very popular across the world. China consumes nearly 25% of the world’s onions every year.
