Homemade pizza dough

Pizza Dough Method

You can either make your own pizza dough following the simple steps below, or you can purchase a premade base at your local store.

  1. Whisk yeast and lukewarm water in a jug. Stand for around five minutes.
  2. Add the salt and flour in a large bowl. Create a hollow centre in the flour. Slowly pour the liquid yeast mixture and oil.
  3. Using your hands or spatula, gently combine the flour mixture until smooth. Then turn out dough onto lightly floured surface and hand knead for roughly five minutes.
  4. Place the dough mixture in to an oiled bowl, and cover with plastic wrap. Leave in a warm place until the dough has at least risen to double in size.
  5. Turn dough out onto a lightly floured surface. Hand knead gently for five minutes until reasonably smooth.
  6. Sprinkle some flour on work surface before rolling out dough to prevent any sticking.
  7. Divide dough mix into equal amounts, now roll out the bases to the desired size.

TIP: We have other dough recipes if you would like to try your hand at sourdough, poolish or more.

Oven time

Put the Provola Ahumada Y Speck pizza in the middle of your oven (on a pizza steel if you have one) and set timer for 10 minutes.

After 10 minutes, open oven and look at pizza.

The pizza should be done within roughly 15 minutes. Always cook to personal tastes.

About Speck

Speck is a cured Italian ham is made from pork shoulder or loin, being smoked, then heavily salted and dried. The result is a delicious balance of sweet and salty flavors that provides depth to any kind of pizza.
When using Speck as a topping for your pizza, you’ll want to cut the meat into small cubes before adding them on top of the cheese. This will help ensure the pieces cook evenly throughout the baking process and make sure each piece has just enough flavor without overpowering other ingredients.

Pizza Tools

When making Provola Ahumada Y Speck Pizza, it’s always handy to have the right pizza making tools. Here’s what items I always recommend…

Pizza Steel

A pizza steel is very similar to a pizza stone, and works the same way in a normal kitchen oven.

Dough Mixer

OK, so this isn’t vital, but if you make enough pizza, breads, etc it is worth investing in a good mixer for your dough.

Mesh Sieve

You will find having a seive such a useful element for all your baking, not just for pizza. It’s great to filter all flours through a fine mesh sieve before adding to recipes.

Mozzarella

Mozzarella is typically white when fresh, however when seasoned, it often changes to light yellow. Ideally it is served the day after it was made. However it can be kept in brine for a week, or even longer if packaged well.

Mozzarella is the most popular cheese to put on pizza as a topping. It can also be twisted to form a plait, and called Treccia.

Keeping Pizza

Leftovers after the meal? Here are some tips.

Chill in the fridge

You can keep pizza in plastic wrap or a container for up to 3 days in the fridge.

Can you freeze pizza?

You can freeze pizza for up to three months, however I’d suggest consuming it within the first few weeks, ideally.

How to reheat

There are many ways to reheat pizza. We cover seven of them in this article.

Pizza making FAQ

Want to make delicious pizzas at home? Here are some expert answers to some of the most common pizza making questions.

Can I use durum wheat flour for pizza dough?

It depends; if it’s fine enough, yes. Durum wheat is a variety that is usually ground down to make semolina, which is used to make pasta. If it is ground into a finer flour, it can be used to make pizza dough and breads.

Should I double every ingredient when making pizza dough?

Not typically, no. If a pizza recipe states that, it may be inferring that to get twice the dough you need twice the ingredients. See our baker’s percentage guide on why we should use baker’s percent rather than fixed ingredient amounts. It makes a lot of sense!

How much sodium is in a slice of pizza?

Pizza has a significant amount of sodium. A typical slice of pizza can have anywhere from 600 to 1500 mg of sodium per slice. This makes it easy to hit the daily 2,300mg limit that they recommend.
